'Carapulcra' - Chicken and Pork in a Peruvian Peanut Sauce

Carapulcra is a Peruvian dish of pork and chicken in a peanut sauce thickened with papaseca (dried potatoes). You can achieve the same effect by choosing a floury variety of potato and cooking it for long enough that it begins to break up into the stew.

  • Prep: 15 minutes
  • Cook: 40 minutes
  • Total time: 1 hour, 15 minutes
  • Recipe serves: 4

Ingredients

  • 225g sugar
  • 60ml water
  • 360ml evaporated milk
  • 600ml condensed milk
  • 5 whole eggs
  • 4 egg yolks
  • 1 teaspoon vanila
  • 1/2 teaspoon almond flavouring
  • 1/2 teaspoon salt
  • Large 4 pint quantity sized mould
  • bundt pan or cake tin
  • Hearst shaped mould for valentine special!!!

  6. Mattis ut vitae feugiat augue cras ut metus a risus iaculis scelerisque eu ac ante.
  7. Fusce non varius purus aenean nec magna felis fusce vestibulum velit mollis odio sollicitudin lacinia.
  8. Aliquam posuere, sapien elementum lobortis tincidunt, turpis dui ornare nisl, sollicitudin interdum turpis nunc eget.
